Spicy Baked Tilapia
How to make the best Spicy Baked Tilapia using an oven!

Equipment

Ingredients
- 3 Whole Tilapia
- 1 Yellow Onion (Medium Size)
- 5-6 Habanero Peppers (Add more if you like heat)
- 1/4 Thumb-size Ginger Based on preference
- Garlic Based on preference
- 1 Red Bell Pepper Seeded & Chopped
- 2 TBSP Suya Pepper / Kyinkyinga Powder
- Salt Based on preference
- Cooking Oil
- Distilled White Vinegar
- 2 Lemon
Instructions
- Clean the fish; make sure to cut off the fins, scales, etc. and rinse it off with water
- Make 3-4 incisions on both sides of the fish and place it in a large bowl
- Soak the Tilapia in 3-4 tablespoons of Distilled White Vinegar, fresh lemon juice from one lemon, and 2-3 tablespoons of salt for a few minutes (around 10-15 minutes) then rinse
- Pat the fish dry and place in a dry bowl
- In a blender, pulse onion, peppers, ginger, suya pepper, and 2 tablespoons of oil
- Taste the mixture and add salt, if needed
- Squeeze 1/2 lemon all over cleaned fish and wearing gloves generously fill the inside and outside of the fish with the blended ingredients
- Wrap the bowl with cling wrap and place it in the fridge to marinate overnight*
- When ready to bake, preheat oven to 350ºF/177ºC/Gas Mark 4
- Line baking sheet with parchment paper/aluminum foil and generously spray with cooking spray
- Lightly shake the bowl and remove the cling wrap
- Transfer the coated Tilapia to the greased baking sheet, add sliced onions/other veggies (if using) and bake in the oven for 30 minutes using the middle rack in the oven
- After 30 minutes, open the oven and using a cooking brush, brush the top of the fish with the juices from the fish
- Serve with Fried Yams, Banku, Kenkey, etc. and enjoy!

*If you are using the same day, make sure to marinate the Tilapia for a few hours prior to baking!
